Zuppa Toscana

Ingredients
  

  • TBSP cooking fat
  • 1 medium onion chopped
  • 1 lb ground Italian sausage
  • 4 cloves garlic minced
  • 1 Tbsp Italian seasoning I used dry basil and fresh oregano.
  • 1.5 tsp salt
  • 1 tsp pepper
  • 1 tsp crushed red pepper I used ground.
  • 8 cups chicken broth
  • 7 medium red potatoes coarsely chopped
  • 5 oz fresh kale chopped
  • 13.5 oz can coconut milk

Instructions
 

  • In a large pot, melt the fat, add onion and saute 3 mins.
  • Add the sausage and cook until browned
  • Add spices, saute 3 mins
  • Add the garlic, stir 1 minute
  • Add the Ck broth and potatoes
  • Bring to a boil, Reduce heat, cover, simmer 10 minutes
  • Add the kale and coconut milk.
  • Simmer 5 mins or until potatoes and Kale are tender
