Chicken Pie

Excellent main dish!

Ingredients
  

  • 2.5-3 lb Broiler/fryer Chicken
  • 2 Stalks Celery Cut into large pieces
  • Salt to taste
  • 1/2 Cup Butter melted
  • 1 Cup All Purpose Flour
  • 1 Tbsp Baking Powder
  • 1/4 tsp Salt
  • 1/2 onion chopped
  • 1 Cup Milk
  • 1 can Cream of Celery Soup (10 3/4oz) undiluted
  • 1.25 Cup Chicken Broth or 1 can (10 3/4oz) undiluted
  • 1/4 tsp Pepper

Instructions
 

  • Combine chicken, 1 stalk of celery, salt, and water to cover in a Dutch oven
  • Cover and simmer over low for 25-30 minutes or until chicken is tender
  • Remove chicken, reserving liquid
  • Debone and dice meat
  • Please meat in a lightly greased 11 x 7 x 2" baking dish
  • Add the remaining stalk of chopped celery and the chopped onion
  • Drizzle the melted butter over
  • Combine flour, baking powder, salt, & milk
    Beat until smooth with a whisk
    Pour over Chicken
  • Combine Celery Soup & Chicken Broth in a small saucepan
    Bring to a boil over medium heat
    Pour over chicken - do not stir
  • Bake at 425° for 50 minutes or until golden brown
