Black Beans and Yellow Rice

Ingredients
  

  • 5 oz Mahatma Yellow Rice
  • 15 oz Black beans canned
  • 3 tbsp Lime juice
  • 1 tsp Chili powder
  • 1 tsp Cumin
  • 1/4 Cup Onions Chopped
  • 1/2 Cup Cilantro Chopped
  • 1 Cup Mild Cheddar or Mexican Cheese Grated
  • Garnish options: sour cream, green onions, chopped tomatoes

Instructions
 

  • Cook rice mix according to package directions.
  • Drain beans, reserving 2 T liquid. Combine beans, reserved liquid, lime juice and seasoning in a saucepan. Cook over medium heat until thoroughly heated.
  • Serve beans over rice. Garnish as desired.
  • Serve with Tortilla chips on the side.

Notes

I found this recipe in a Mahatma Rice advertisement in Southern Living
at least 25 years ago. It became a favorite and a pantry staple in our
home. It's quick and always yummy. It's even good if you don't have
any of the toppings. When our boys were still at home, we doubled the
recipe. Now, with just the two of us, if we're extra hungry, we'll use
two cans of beans, doubling the lime juice, chili powder, & cumin.
Speaking of the seasonings - I don't measure so I probably use more
than called for ;)
