Ingredients
  

  • 2 Talapia Filets or any other white fish
  • Olive Oil & Butter
  • Fresh Parsley chopped
  • 2 Portebello Mushroom Caps chopped
  • 1 Can Cannellini Beans
  • Salt & Pepper to taste
  • ½ Medium White Onion chopped
  • 1 Lemon

Instructions
 

  • Put a little olive oil and butter in a heavy pan. Sauté the onion and mushrooms.
  • Add the Cannellini beans and some parsley.
  • Remove all from the pan and set aside in a bowl.
  • Add more olive oil to the pan. S&P the fish. Sprinkle with parsley and cook a couple of minutes on each side - leave ever so slightly rare inside.
  • Plate the fish. Pour bean mixture over the fish like a garnish.
  • Melt another T or so of butter to drizzle over. Squeeze a lemon wedge over each and garnish with remaining lemon.

Serves 2
This only takes about 15 minutes to cook. It's a great, simple meal for 2 people. I usually just buy fresh sliced Baby Bella mushrooms and I usually don't have fresh parsley. I've even made it without the fish when we were desperate for something quick and healthy.
