Ingredients
- 10 oz. Jar of Garlic stuffed Green
- 2 T Olive Oil divided
- Olives Coarse Salt
- 2 Cloves Garlic optional
- 1 T + 1 tsp Dried Herbs or Bread
- 2 C Lukewarm Water 105°F
- 1 Pkg/ Active Dry Yeast 2-¼ tsp
- 4-1/3 C All-Purpose Flour divided
- 1 T Parmesan Cheese finely grated
- ½ T Salt optional
- Dipping Seasoning (purchased or prepared)
Bread Dipping Seasoning
- 1 T dried oregano 1 tsp dried thyme
- 1 T dried basil ½ tsp dried rosemary
- 1 T dried parsley ½ tsp garlic powder
- 2 tsp onion powder Grated Parmesan cheese
- 2 tsp black pepper Minced Garlic
- 2 tsp red pepper flakes Extra Virgin Olive Oil
- 1½ tsp kosher salt
Instructions
- Slice the olives.
- In a large mixing bowl, combine water and yeast. Add 1 cup of flour and salt; stir with a wooden spoon until combined.
- Stir in olives, garlic, and 1 T bread dipping seasoning (or an herb mixture from any of the ingredients in the list below).
- Add remaining flour, one cup at a time, stirring until thoroughly combined.
- Cover with plastic wrap and set in a warm spot to rise for 1 hour.
- Put one tablespoon of olive oil in an 8-inch cast iron skillet; using a napkin or your fingers, coat the bottom and sides of the skillet with the olive oil.
- Flour your hands; remove plastic wrap and using your hands, transfer dough to the prepared skillet and shape into a disk.
- Cover with a kitchen towel and let stand for 30 minutes.
- Preheat the oven to 400°F.
- Drizzle remaining olive oil over the top and sprinkle with salt and bread dipping seasoning (or more herbs), and Parmesan Cheese (optional).
- Score the top of the loaf with a knife.
- Bake for 30 to 35 minutes, or until the top is nicely browned. Remove from the oven and turn the bread out onto a wire cooling rack.
- Leave to cool. Serve.
Bread Dipping Seasoning
- Combine all dry ingredients. When ready to use bread dipping, add 1 T of the dry mixture with 1 clove minced garlic, 1 T Parmesan Cheese, and½ c Olive Oil.
Notes
If you don't want to buy or make bread seasoning, just use any of the dry ingredients you have in your pantry. I only use the bread seasoning during the baking as we found that Olive Oil alone is great for dipping with this bread.
