Zuppa Toscana
Ingredients
- TBSP cooking fat
- 1 medium onion chopped
- 1 lb ground Italian sausage
- 4 cloves garlic minced
- 1 Tbsp Italian seasoning I used dry basil and fresh oregano.
- 1.5 tsp salt
- 1 tsp pepper
- 1 tsp crushed red pepper I used ground.
- 8 cups chicken broth
- 7 medium red potatoes coarsely chopped
- 5 oz fresh kale chopped
- 13.5 oz can coconut milk
Instructions
- In a large pot, melt the fat, add onion and saute 3 mins.
- Add the sausage and cook until browned
- Add spices, saute 3 mins
- Add the garlic, stir 1 minute
- Add the Ck broth and potatoes
- Bring to a boil, Reduce heat, cover, simmer 10 minutes
- Add the kale and coconut milk.
- Simmer 5 mins or until potatoes and Kale are tender
