Potato Salad, German Style

Ingredients
  

  • 5 lbs Potatoes Yukon Gold or Red
  • 2 tsp Salt
  • 1 Med-Lg Sweet Onion
  • 1 pkg Knorr Salat Kroenung & Kraeuter Mix or your favorite Italian Dressing Mix
  • 1⁄3 - ½ cup Malt Vinegar
  • 1⁄8 - ¼ cup Water
  • 1⁄8 - ¼ cup Oil a light oil, such as Canola

Instructions
 

  • Peel, cut, and boil the potatoes in salted water in a 5 qt Dutch oven.
    While they are cooking, chop the onion into small pieces and place in a large bowl. Add the salad dressing mix, vinegar, water, and oil to the bowl.
    Cook the potatoes until they are done, but still firm. Drain the cooked potatoes then place them in the bowl while they are still hot.
    Stir gently so as not to mash them. Taste, then add more vinegar, salt, etc. as needed.

Notes

This can be served warm or cold. The Knorr mix can be found in a German grocery, or on Amazon.
