Pimento Cheese

Ingredients
- 16 Oz. Block Sharp Cheddar
- 4 Oz. Jar Diced Pimentos
- Mayonnaise
Instructions
- Grate the cheese into a bowl. Empty the contents of the jar into the bowl - Pimentos, juice and all. Add mayonnaise to your desired consistency. Enjoy.
Notes
It really is that simple. You may half the recipe by using an 8oz. block of Sharp Cheddar and a 2 oz. jar of Diced Pimentos. You might enjoy a sprinkling of Tony Chachere's Seasoning but I wouldn't add it to the bowl because the salt in it can then make it runny. Extra-Sharp is good, too, but always use a Sharp cheddar - and always buy the block and grate it yourself.
